I broke out the Instant Pot last weekend and my first attempt was making hard boiled eggs. Perfection - they cooked like perfection and peeled so easily. I'm hooked.
Okay, onto something more elaborate - I made the Salisbury Steak Meatballs from the Skinnytaste website. If you have never been to her website - go - so many amazing healthy recipes. I've been making food from her website long before I started Weight Watchers and even non-diet people in my life love the food!
I paired the meatballs with another one of the Skinnytaste recipes, the Skinny Garlic Mashed Potatoes, and it was a super yummy (and only 10 points for the total meal).
