Garlic Knots

For Super Bowl Sunday I avoided the hours long wait times for ordering pizza (it is true - I worked at  a Little Caesars in college and we'd have 2 hour waits for pizza on Super Bowl Sunday) and made my own pizza and garlic knots.  Extra bonus - my whole meal was 10 Weight Watchers points!  I couldn't have had one piece of delivery pizza for 10 points.

I've shared my pizza recipe with you all before, it really has been my go-to lately for a quick easy meal.
And I also made the SkinnyTaste Garlic Knots to go with it. Again super easy, I used 1 cup of self-rising flour, 1 cup 0% fat Fage Greek Yogurt.  Mix, kneed, divide into eight balls, roll out and shape into knots.
Bake at 350 for 18 minutes, let cool for 2 minutes and top with a little melted butter and garlic.  So yummy!

Bagel Mania

Skinny Bagels - they are ALL OVER THE INTERNET.  I'm sure you've seen it if you follow any Pinterest or Weight Watchers people.  Everyone is talking about the SkinnyTaste Bagels.  They are only 3 WW Points - and therefore I JUST had to try them out.

Ya'll - run to your kitchen and make these - dieting or not - they are so good and so easy to make.

I basically followed the SkinnyTaste Bagel Recipe - but to make it easier on myself I used 1 cup of self-rising flour and 1 cup of Fage 0% Fat Greek Yogurt.

Mix together, roll into ropes, twist into bagel shape and bake at 375 for 25 minutes.
I didn't put any seasoning on my first batch - but am thinking of all the future possibilities.  Everything Bagel Seasoning, parmesean cheese, cinnamon/sugar...it is endless.

I did use one bagel to  make a healthy breakfast sandwich, Canadian bacon, eggs and a sprinkling of fat-free cheese  (3 total WW points!).
If you've tried these bagels let me know what you like to season them with or eat them with.

Salisbury Steak Meatballs

And Skinny Garlic Mashed Potatoes!

I broke out the Instant Pot last weekend and my first attempt was making hard boiled eggs.  Perfection - they cooked like perfection and peeled so easily.  I'm hooked.

Okay, onto something more elaborate - I made the Salisbury Steak Meatballs from the Skinnytaste website.  If you have never been to her website - go - so many amazing healthy recipes.  I've been making food from her website long before I started Weight Watchers and even non-diet people in my life love the food!

I paired the meatballs with another one of the Skinnytaste recipes, the Skinny Garlic Mashed Potatoes, and it was a super yummy (and only 10 points for the total meal).

Veggie Birthday Treat

Hi All!  Quick post today - been a busy week with school starting up again next week.

Today we are celebrating our Director's birthday - he is a super health nut and never eats anything "he shouldn't" so I had to think of something to make him for a birthday treat.

Had I gotten my act together, I wanted to attempt this:

But let's be honest, that wasn't happening.

So one of my staff sent me this picture she found on the web:
And that looked reasonable.  So I cleaned out my veggie drawer last night and put together this:
I know he'll like it - and PS the rest of us will be eating cupcakes.

Pulled Pork Fries

Happy Monday all!  Hope everyone had a lovely weekend.

Christmas is only two weeks away!  I am about 2/3 the way done with shopping, just have those hard to buy for people left.

This weekend we went to the new Jimmy Jacks Rib Shack and it was amazing!  I got the Jacks Sampler with pulled pork, beef brisket, and sausage plus fries, beans and corn bread.  It was so much food.  I ended up taking 3/4 of it home.

So today's post is about leftover and thinking outside of the takeout box.  I had my leftover pulled pork, and just wanted to do something different with it than just throw on a bun.  I scoured my kitchen to get inspiration, was thinking of pulled pork nachos but had no tortilla chisps, however I found some frozen french fries in the freezer.

I cooked the fries first in my Air Fryer
Then I added some cheese and the leftover pulled pork
Put in under the broiler for about 10 minutes to melt the cheese
and added some ranch for the win!
Result was very yummy!

Christmas Goodies

Happy Thursday everyone!  A quick post today - it's the last week of the semester so it's been crazy busy at work.

That being said, once the semester chaos dies down I need to start thinking about Christmas goodies.  Looking back at some pictures of years past here's what I've made:

Nutter Butter Santas; Chocolate Covered Pretzels; Fruit Loop Cereal marshmallow bites.
More chocolate covered items:  I fill Ritz crackers with peanut butter and coat them in chocolate and white bark, and then yes, that is chocolate covered bacon!
And can't forget classic sugar cookies.

And if you are all sugar'd out - you can offer up some cute veggie trays:

Thanksgiving Menu

It's a week away - it's a week away!  Yikes!  Need to get my behind in gear and figure out what my Thanksgiving menu will be.

For starters, no big ole turkey.  This year I want to do a turkey breast roulade with stuffing and maybe potatoes and maybe gravy inside.  Something like this:

This Sage & Cornbread Dressing sounds yummy!

I usually make my Corn Flan:
But not sure anyone other than me likes it, so maybe something different this year will be:

And for dessert - no pumpkin pie - instead I'm thinking of these apple dumplings:

What's on your Thanksgiving menus that is unique and different?
