Loaded Nacho Bubble Up

Hey everyone - I stumbled across a new blog last week (Drizzle me Skinny!) and fell IN LOVE! 

Some of the best weight watchers recipes ever!

Last week I made her Loaded Nacho Bubble Up and it was so yummy. Everyone that knows me knows how much I love nachos - which we know are not usually healthy - so this was the perfect way to get the nacho taste and stay within my daily points.

Ingredients
  • 1 7.5oz package biscuits, I used great value brand (10 small biscuits in pack)
  • 1 lb cooked extra lean ground beef
  • ½ tsp paprika
  • 1 tsp chili powder
  • 1 tsp red pepper flakes
  • Dash of salt & pepper
  • ⅓ cup salsa
  • 25g tostitos chips, crushed
  • 1 red onion, diced
  • 1 tomato, diced
  • 2 jalapenos, diced
  • 1 bunch green onion, diced
  • ⅔ cup light (reduced fat) shredded cheese, I use a 3 cheese blend
Instructions
  1. Preheat oven to 350F
  2. Cook ground beef in a pan on stove, drain fat and set aside in a bowl
  3. Cut your 10 small biscuit pieces into 6 small pieces each and spread out in bottom of a sprayed 9x13 casserole dish.
  4. Pre bake biscuit pieces for 12 minutes, remove from oven.
  5. In a bowl mix your ground beef and spices together, add in your salsa and mix well.
  6. Dice your onion, tomato, jalapenos and green onion, place your chips in a small zip lock and crush them up.
  7. Use half of your ground beef mix and spread over biscuit, sprinkle half of your chips on top of meat, then layer half of your onion, tomato and jalapenos and ⅓ cup of your cheese. Repeat with remaining meat, chips, and veggies. Leave the green onion and remaining ⅓ cup of cheese to the side.
  8. Bake in oven for 25 minutes, remove and sprinkle remaining cheese and the green onion on top and return to oven for 15 minutes.
  9. Cut into 6 servings, each serving weighs approx 7-8oz. 7 smart points or 6 points plus per serving.

  11. *Please note if you can not find the 7.5oz dough packs (that come in a 4 value pack) use the regular sized biscuits, weigh out 7.5oz and then cut your dough into small pieces. Also if you don't want it spicy swap the jalapeno peppers for green peppers and use only ½ tsp red pepper flakes.

Bachelor - Arie - Week 8

First off I have to be honest, I had dinner with some girlfriends last night and got home late and only half paid attention to the show.  I really not vested in caring who Arie picks - especially after he sent my favorite home last night! 

But some funny/awkward moments from tonight's show:

First hometown - Kendall - remember that guy Kirk DeWindt from Ali Fedotowsky's season of The Bachelorette? Seriously - Kendall and Kirk need to find each other, their love for taxidermy needs to be contained to the two of them.


Next up we go to Arkansas and apparently eat lots of little weiners in Weiner Arkansas.  Ugh.  Heartbreaking to see how much Tia wants it to happen with Arie, and how he's leading her on...
Arie then goes north to Minnesota and meets Becca's family.  I don't recall her talking before about her dad passing when she was 19, but that was the age I was when my dad passed so my heart went out to her.  Her uncle was a bit severe in his "protective" role now that the dad is gone.  Geez! 
Last up is Virginia and Lauren. 

As I was surfing through Twitter last night, came across this headline:
Lauren's dad was all tough but melted when Arie said a bunch of race car drivers visited the troops in Iraq - so that makes this man who is kissing 3 other women and telling them he loves them okay for your daughter then?

I will confess - I have read Reality Steve so I know the spoilers - and if he is correct (and he usually is) the ending will be a doozy!

Friday Favorites {2.16.18}

First off - I was having a bit of a bad week last week, which reminded me of my favorite scene from Real Housewives of New York:
So I bought myself a couple treats:

 When I tweeted about my new gifts - Dorinda actually responded!!!

Next up - I took the famous 2-ingredient dough (self-rising flour and yogurt) and instead of making garlic knots this time, I dipped them in cinnamon/sugar and made a sweet version.  Yummy!
Another great new food find this week - Gouda Cheese Triscuits - seriously, try them!
Finally, had a lovely weekend where me and my besties treated ourselves to pedicures.

Happy Valentines Day!

Happy Valentines Day all!  I hope everyone has a great day and feels love throughout the day.

I gave my team all gifts today - thanking them for doing a "souper" job!
My sister-in-law makes these great bowl holders, they are perfect for holding a hot bowl of soup or other food in your lap and being able to eat.  So talented is she!
I was also blessed with a cute rose bush and candy and a bear from my Love - he's a keeper for sure!

Bachelor - Arie - Week 7

This week on the Bachelor - we are off to Italy.  Another beautiful location, more dates I really don't care about (sorry - this season is just so boring). 




My favorite pastime while watching the Bachelor is reading tweets from past contestants and this week was no different. 

I do feel for some past contestants that had not such nice, romantic getaways.  I remember Trista and Ryan commenting that their "fantasy suite" was in Seattle!  LOL!  Well as you know a few seasons back we had a Bachelor from Iowa (no comment on how he's doing today *sigh*)

Hey - as an Iowan I was a little offended.
But she is right...

The dates were fine - no shocked by the outcomes except why Arie is so take with Lauren, there has to be lots we are not seeing.

I was proud of Jacqueline for going home - I have so many feels on the process being rushed and her thought that she could wake up someday and realized she got engaged after six weeks and then found herself married to someone she didn't know.  Very smart.  (I will fill my readers in on my marriage/divorce sometime and as to why I understand Jacqueline so well).

Hometown dates next week - looks like some harsh loved ones.  Wahoo!

Mexican Shrimp Burrito Bowl

Last week I tried a new recipe - Mexican Shrimp Burrito Bowls - and the result is yummy!

I loosely followed  the recipe I found at Cooking With Points and here is the recipe with my notes:



Mexican Shrimp Burrito Bowl
Yield: 4 servings
Total Time:30 minutes
Prep Time:15 minutes
Cook Time:15 minutes
 

Ingredients:
  • 1 teaspoon canola oil (I used olive oil because that is what I had on hand)
  • 1 pound 21-25 shrimp, peeled and deveined
  • 1 clove garlic, minced (I love garlic and used about 3-4)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon honey (I forgot!)
  • 1 cup corn (I used a whole 15oz can)
  • 1 cup canned black beans, rinsed (again I used the whole 15oz can)
  • 1/4 cup canned diced green chilis (I used the whole 4.5 oz can)
  • 1/2 cup grape tomatoes, halved (I didn't measure, just threw a bunch in)
  • 2 green onions, thinly sliced
  • 1/2 lime, zested and juiced
  • cilantro, optional for garnish (didn't use)
Directions:
  1. Add the canola (olive) oil to the pan and heat on medium high.
  2. Add the shrimp to the pan and cook for 2-3 minutes, then flip and cook an additional minute.
  3. Add the garlic to the pan and stir.
  4. Add the seasonings to the pan and stir again.
  5. Add the corn, the black beans and the chilis and stir until well coated.
  6. Add in the honey, lime juice, and lime zest and stir.
  7. Remove from the heat and add in the tomatoes, green onions and cilantro (if using).
