Beef Stew



Time to return gifts - Just kidding!!!  I actually love to shop after Christmas and hit up all the sales and even start planning for next year.  Since I will be out and about all day, I love to have a warm soup to have bubbling in the crock-pot all day waiting for me when I get home.  

This beef stew fits all the requirements for comfort food, warm and filling!

 
Ingredients:



2  tablespoons butter or margarine
4  cups halved and thinly sliced sweet onions (about 1 1/2 onions)
2  teaspoons dried rosemary
1 1/2 lb beef stew meat
1  32 oz carton  beef flavored broth
1  package (.87 oz) onion gravy mix
2  cups cut baby carrots
4  medium potatoes, diced
1  cup frozen sweet peas

Directions:

In 10-inch skillet, melt butter over medium-low heat. Cook onions in butter 30 to 35 minutes, stirring frequently, until onions are deep golden brown and caramelized. Stir in thyme and stew meat; place in slow cooker.


In crock-pot, put beef stock and onion soup mix.
 
Dice up potatoes and carrots.
 

When onions are golden brown,
 
add rosemary and stew meat
 
Cook until meat is just brown on all sides
 
Put meat/onion mixture, plus potatoes and carrots into crock-pot.  Cook on low 6-8 hours.
About an hour before you intend to eat, add frozen peas.
 

Ready to serve – eat up!
